The location will open in the former Double Play Diner at 202 N. State St. and adjacent to U.S. Highway 60.
Everest CEO Trishelle Kirk said the company explored between 10 and 15 locations in eastern New Mexico over the last few years, including Clovis.
To transform the former diner into a retail establishment, Everest is working with local contractors and has hired ten local employees to work in the store.
